Salmon Hash

Serves 6

❖ 1.3kg (3lb) skin-on salmon fillet

❖ 5–6 each of parsnips, turnips and carrots, peeled and chopped

❖ 60ml (2½fl oz) olive oil

❖ Handful of fresh herbs, such as dill, savory, parsley or mint

❖ Salt and freshly ground black pepper

Place the salmon and vegetables in a large pan, adding enough water to come halfway up the side of the salmon. Bring to a simmer, then cover and cook for 5–10 minutes depending on the thickness of the salmon. Do not overcook.

When the salmon is cooked, move it to a cutting board. Toss the lightly poached vegetables in a bit of olive oil before running them under a hot grill for a minute. The oil helps them char.

Flake the salmon, then toss with the vegetables and serve.
